Pork chops, but make it healthy

Happy New Year friends! I hope you all had a wonderful holiday season filled with lots of memories & love!
I don't know about you, but I definitely took it real easy over the break. Ate tons of delicious (not healthy) food, laughed a bunch with my family, & binged watched all of the Lifetime Christmas movies. Now it's time to jump into 2022! Every year I make a list of resolutions, but never achieve all of them. I want this year to be better than the last & continue to work to be the best version of myself. My goals & resolutions for 2022 are much more realistic, attainable, & focus more on my overall well-being, emotional & mental, than just physical health.
I spent my New Year's day being productive. I reflected on all of the blessings & lessons the past year taught me, deep-cleaned the house while catching up on my favorite podcasts (Bigger Pockets Money & Bigger Pockets Real Estate), finished reading Kisses and Croissants, a fun & flirty read about a girl pursuing her dreams as a ballerina in Paris, & my personal favorite, cooking!
The holidays may be over, but you don't have to jump right into eating super-clean, protein-packed, low-carb, etc, etc, meals. It's called balance & I'm here to bring you a savory, flavorful, & healthy meal. Yup, I'm talking about pan-seared pork chops with a roasted cauliflower mash. Let's get started!

For the roasted cauliflower mash:
- 1 large crown of cauliflower
- 2 tbsp + 1 tbsp extra virgin olive oil
- 4 cloves of garlic
- 1/2 cup plain, unsweetened almond milk

- Preheat your oven to 400 degrees.
- Wash the cauliflower, then chop into 1/2 inch slices.
- Line a baking sheet with parchment paper, arrange the cauliflower slices on the baking sheet, & drizzle with 1 tbsp olive oil.
- Take a 4-inch by 4-inch section of tin foil, mold it into a bowl shape, & place it on the same baking sheet as the cauliflower.
- Fill the foil bowl with 2 tbsp olive oil & peeled garlic cloves.
- Placed the baking sheet on the top rack & roast for 25 minutes.
- Remove from the oven & place the contents in a bowl (or blender), add the almond milk, & blend using an immersion blender or stand-up blender.




For the pork chops:
- 2 bone-in pork chops
- 1/2 tbsp extra virgin olive oil
- Salt & pepper
- 1 tsp dried thyme
- Preheat the oven to 350 degrees.
- Place a pan on high heat & add the olive oil.
- Season both sides of the pork with salt, pepper, & dried thyme.
- Brown the pork chop in the pan for 2 minutes each side.
- Place the pan in the oven & cook for 15 minutes.
- Remove the pan from the oven, then plate your dish with the cauliflower mash & a side salad.
- Enjoy!
